Easy Healthy(ish) Banana Bread | Baking

I love to bake and I have a sweet tooth but try to keep things healthy so I couldn't think of a better way to bake a healthy(ish) banana bread with dark chocolate chips! 
I say healthy(ish) because I have swapped a couple of the ingredients because I didn't have them in the cupboards, but you can accommodate the receipt to suit you. 

 I found this amazing recipe on Pinterest by yummyinspirations so this recipe is not my own (just a little disclaimer) but I have slightly adapted the recipe to my personal preference and I do love sharing great, easy recipes, so lets get into some baking!

You will need the following:

A loaf Tin 
Greaseproof paper
Mixing bowl

3 ripe bananas
50g of unsalted butter (I just used anchor butter)
1 teaspoon  bicarb soda
Pinch of salt (I don't do this, personal preference)
1/2 to 1 teaspoon ground cinnamon (I add this! I love cinnamon, nutmeg may be a good alternative)
1/3 to 1/2 cup of coconut sugar (I didn't have this and used normal caster sugar)
2 eggs
1 teaspoon vanilla extract
1/2 cup of coconut flour
A bag of chocolate chips 

Step 1 
Pre heat your oven to 180C and line your loaf tin with greaseproof paper.

Step 2
Mash 3 ripe bananas in a mixing bowl until smooth.

Step 3 
Melt 50g of butter and carefully mix with the mashed bananas.

Step 4 
To the mixing bowl you need to add bicarb soda, salt, cinnamon, sugar and vanilla extract.

Step 5 
In separate small bowl crack the eggs and whisk with a fork until smooth.

Step 6 
Add the coconut flour and egg mix until the mixture is completely combined together (this is so that no lumps of coconut flour are stuck in the mixture) then add the chocolate chips! and pour the banana bread mixture into the greaseproof loaf tin.

Step 7
Pop the loaf tin in the pre heated oven for 45/55 minutes, keep checking until golden brown and cooked through (Top tip: pop a knife in the mixture and if the knife comes out clean the mixture is cooked)

Step 8
Using oven mitts take the loaf tin out of the oven and allow to cool on the side (this will be tempting to try some (because your kitchen will smell amazing) but wait until cooled and then cut into slices when you fancy a tasty treat.
